Wilderness is recruiting a Food And Beverage Manager, to be based in Windhoek, Namibia.
Description
- This position is responsible for providing a support function to the camps to take charge of all food and beverage related matters
- This includes managing kitchen and front of house staff
- It also includes the process of getting the produce to camp, the standard of preparation of the food. Further, a support functions to the camps with regards to budget controls and customer satisfaction
Duties
- Ensure that consumable and non-consumable goods are ordered, correctly stored and issued to the various departments
- Ensure that regular stock takes are conducted
- Circulate throughout all restaurants and bar areas maintaining a high profile with customers and staff
- To carry out or ensure that regular On-the-Job Training is taking place to agreed standards
- Ensure compliance of Brand Standard
- Ensure that staffing levels are correct and to agreed standards and are not exceeded without prior consultation
- Ensure that company and statutory food hygiene standards are maintained in all areas
- Attend timeously to customer complaints
- Ensure that reports and administration requirements are timeously submitted
- Hold regular performance appraisals, identifying areas for development and training needs
- To ensure the prompt and efficient service of all meals, snacks, functions and beverages to the required standards
- Ensure that profit margins are maintained, agreed costs are not exceeded through effective control systems, including issuing against dockets, sales analysis and menu costing
- Ensure that bars and cloakrooms are clean and stocked with the stipulated requirements
Requisites
- 3 to 5 years of related experience thein a camp environment
- Diploma in Culinary arts is a prerequisite
- Good knowledge of food and food presentation standards
- Good Knowledge of Stock levels, Storerooms and control systems to be adhered to as per minimum standards
- Ability to read, write and comprehend simple instructions, short correspondence, and memos
- Excellent computer literacy skills
- Proficient in written and spoken English
- Excellent problem resolution skills along with outstanding communication and active listening skills
- Must be Professional, resourceful, responsible, smart and independent – with a natural instinct to be a wonderful sociable host
- A record of outstanding staff relations and the skills and experience to constantly motivate staff
- A keen understanding of the ethos of bush life, with a plainly apparent respect and compassion for conservation
- Driver’s license
